Recipe: Babycorn-Spring onion soup

Try out our special recipe of Babycorn-Spring onion soup and feel how wonderfully delectable even low carb food can be.


Ingredients:

2 tomatoes chopped
2 tsp chopped ginger
2 tsp chopped garlic
2 spring onions chopped
A handful of chopped spinach leaves
2 potatoes chopped
2 onions chopped
4 tsp chopped coriander leaves
1/2 cup lentil
½ cup peas
Salt to taste
3 tsp black pepper
2 tsp butter


For garnishing:

4 tsp chopped spring onions
4 baby corns chopped
2 tsp chopped garlic
1 tsp cheese(optional)
1 cube cottage cheese cut in squares)

Procedure:

Pressure cook all vegetables and lentil in 4 cups of water. Allow to cool. Crush the vegetables into a pulp. Now strain the stock from the vegetable pulp.
Heat butter in a pan. Add garlic, spring onion, pepper, cottage cheese, and baby corn. Cook till the ingredients become crispy. Add stalk and allow it to simmer.
Serve piping hot.
