This exclusive recipe, a specialty of Chef Avinash Jha of Park Plaza (Gurgaon) is part of his special New Year Party platter.
Ingredients:200 gms Cauliflower
15 gms Red chilli powder
5 gms Turmeric powder
10 gms Cumin powder
10gms Coriander powder
05 gms Garam masala
30 gms Corn flour
30 gms besan
10 gms Sooji
10 gms Ginger
10 gms Garlic
Oil for deep frying
2 Lemons
3 gms Chat masala
Procedure: Wash cauliflower and keep in salted water for some time then blanch with boiling water.
Marinate with ginger garlic paste lemon juice, red chili powder and salt and keep aside.
Make a batter of corn flour and bessan and sooji with remaining ingredient ,add marinated cauliflower florets in the batter and mix well.
Deep fry marinated cauliflower florets on moderate temperature till it crisp.
Serve with Indian classical salad lemon wedges with mint chutney, sprinkle chat masala on top.
