Cleb chef`s Kadai Paneer

Celeb chef Rakesh Sethi, senior executive chef at Ramada Plaza shares his exclusive New Year recipe with us.

Ingredients:

600 gms Paneer cubes
100 ml Refined oil
05 gms Pounded coriander
2 gms Pounded whole red chilli
05 gms Pounded jeera
05 gms Pounded sounf
10 gms Red Capsicum cubes
10 gms Yellow capsicum cubes
10 gms Green capsicum cubes
20 gms Ginger garlic paste Gms
800 gms Fine chopped tomato
10 gms Degi chilli powder
20 gms Coriander powder
Salt to taste
10 gms Jeera powder
5 gms Pounded kasoori methi
05 gms Garam masala
05 gms Chopped coriander
05 gmsGinger julliens (for garnish)

Procedure:

Heat oil in the handi add whole red chilli, pounded coriande, and jeera , saunf. Cook till they splutter.
.
Then add red capsicum, yellow capsicum, and green capsicum and sauté for 2 minutes,

Add, ginger garlic paste, fine chopped tomato, degi chilli powder, coriander powder, salt and sauté till tomatoes soften.

Add cubes of cottage cheese, jeera powder, and kasoori methi, and garam masala, sauté for 2 minutes.

Remove handi from the flame.

Sprinkle chopped coriander, and ginger julliens for garnish.
