Ingredients:
10 very ripe fresh dark figs,
3cups yoghurt,
2tsp fresh cream,
1cup brown sugar,
150 ml honey,
2.5cm cinnamon, broken into pieces,
3 cloves,
1/2tsp grated nutmeg,
1litre water,
2tbsp strawberry crush,
2 Marie biscuits,
To assemble-
1 glass of long stem,
2tbsp strawberry crush,
2 Marie biscuits,
1 scoop of vanilla ice cream,
1fresh fig sliced, mint leaves to garnish
Procedure:
Place 9 ripe dark figs,, in a saucepan with cinnamon pieces, cloves, nutmeg powder, sugar and honey. Add water and stir until well combined. Place the mixture on low heat until the sugar dissolves. Bring to a boil. Lower the heat and simmer for about 5 minutes or until the figs have softened.
Drain the figs and reserve one cup of liquid, discarding cinnamon pieces and cloves. Puree the figs and the reserved liquid in a food processor. Stir in the yogurt and the fresh cream. And keep in refrigerator to chill.
To assemble-Place 2tbsp yogurt and fig chilled mixture at the bottom of glass. Dip the Marie biscuit in strawberry crush, to coat well.
Place strawberry crush coated biscuit over fig mixture. Spread vanilla ice cream over strawberry crush coated biscuit. Repeat the process once again. At top garnish with sliced fresh figs and mint leaves.
