Potatoes in coconut milk

If you think potatoes have a bland taste and have become boring, do try this interesting recipe.

Ingredients:

5 small potatoes (peeled and chopped in half)
2 cups coconut milk
1/2 cup chopped tomatoes
2 cloves chopped garlic
1/2 teaspoon red pepper
1 tsp olive oil to saute garlic
Salt to taste

Procedure:

Saute the garlic in olive oil.
Add tomatoes.
Cook for 10 minutes, until the oil and tomatoes separate.
Add the coconut milk.
Stir. Add 1/2 teaspoon red pepper, and salt to taste.
Cook for a while. Add the potatoes.
Cook over low-medium heat until the potatoes are done. Serve hot.
