Ingredients
2 tablespoon olive oil
2 tablespoon cider vinegar
2 teaspoon basil, chopped
1 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
3 cup cooked rice, cooled
2 medium tomatoes, chopped
1 medium cucumber, seeded & chopped
1 small red onion, chopped
Procedure In a small bowl, whisk together oil, vinegar, basil, salt and pepper. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.
