Winter is the best season to cook as it offers abundance in shape of vegetables. You can pick a number of fresh green veggies and make some delicious concoction out of them. Try out our healthy and lip smacking recipe and surprise your guests.
Ingredients : 2 tomatoes cut in big chunks
2 onions chopped
1/2 cup spinach chopped
¼ cup fresh coriander leaves chopped
1 chilly finely chopped
½ cup peas
2 boiled potatoes mashed
½ cup cottage cheese cut into pieces
¼ cup cauliflower finely chopped
2 tsp each ginger-garlic paste
2 tsp pepper powder
Salt to taste
2 tsp cream (optional)
2 tsp coriander powder
½ tsp turmeric powder
1 tsp cumin seeds
A pinch of asafoetida
1 tsp butter
¼ cup mustard oil
Procedure : Heat oil. Add cumin seeds, chilly, asafoetida. Now add onions and cook for sometimes. Put ginger-garlic paste and stir for a while. Now add all the vegetables, cover and cook for sometimes. When the vegetables become soft, add spices and mix well. Cook for 10 minutes on low flame. Now add cottage cheese, cream, 4 tsp water and butter. Cook till oil separates. Serve hot with bread or rice.
