Recipe: Marshmallow-Peanut Butter Eggs

Savour the delectable Marshmallow-Peanut butter eggs this Easter.


Ingredients:

Butter 6 ounces
Sugar 3 cups
Peanut butter 1/2 cup
Masrsmallow cream 1 cup
Salted peanuts 1/2 cup
Vanilla extract 1 tsp
Peanut butter candy coating 1 lb

Preparation:

Place the butter and powdered sugar in the bowl of a large mixer. Mix them on average speed until the mixture is fluffy.

Stop the mixer and add the peanut butter, 1/3 cup of the peanuts, marshmallow crème and the vanilla. Also add the remaining powdered sugar, 1/2 cup at a time, until the candy is easy to handle.

Scoop up a small amount of candy and roll it in an oblong shape.

Put the eggs in the refrigerator to firm up for an hour. Place the candy coating in a bowl and microwave it for few minutes.

Once the coating melts, dip the eggs in the coating. While the eggs are wet, sprinkle it with the remaining chopped peanuts. Refrigerate for half an hour to set the coating.
