Enjoy pan seared salmon with spinach & cheese ravioli & lemon chive butter sauce.


Ingredients
Salmon steak (180 gm) 01 no
Goat cheese 30 gm
Spinach 50 gm
Oilve oil 40 ml
Pasta sheet 100 gm
Butter 40 ml;
White wine 20 ml
Onion (fine chopped) 30 ml
Tomato (chopped) 10 ml
Chive 05 gm
Salt & pepper to taste
Orange segment 06 no

Procedure:

· Season salmon with salt & pepper.
· Heat a pan put olive oil and sear salmon from both sides till nice golden color.
· Blanch spinch and chop.
· Add goat cheese, salt, pepper & make a mixture.take pasta sheet, fill the mixture and cover with another pasta sheet, press well so that stuffing remain inside.
· Cut with round cutter or knife to give shape. Blanch ravioli, arrange ravioli on bottom of the plate, put salmon on top.
· Pour sauce on salmon, garnish with orange segment & chive stick

For sauce:
In a small sauce pan add white wine and chopped onion and reduce on a slow heat when it comes to half. Add butter cubes and whisk it when comes to sauce consistency, add chopped tomato and chives.
