Recipe: Warm asparagus salad with balsamic vinegarette & young leaves

Enjoy the delicious taste of warm asparagus salad with balsamic vinegarette & young leaves.

Ingredients:

Asparagus 01 bunch
Balamic vinegar 100 ml
Cheese parmesan 30 gm
Olive oil 20 ml
Assorted lettuce 50gm
Cherry tomato 04no
Suger 10 gm
Salt& pepper to taste

Procedure:

· Cut asparagus from bottom, peel the spears & blanch.
· Put blanched asparagus in ice water so that it remains crispy and green.
· In a sauce pan put 100ml balsamic and reduce it into half. Add some sugar.
· Sauté blanched asparagus in olive oil, add salt &pepper.
· Arrange sauteed asparagus in a plate put parmesan shaving on top and gratinate till nice golden color.
· Put asparagus on the side of the plate. Aarange leaves put balsamic reduction on the plate garnish with cherry tomato.
