Spicy Red Mutton Curry

Try out this spicy, mouth watering recipe. It has a unique flavour of spices and a rich, tangy taste.


Ingredients:

1. ½ Kg Mutton Cubes
2. 15 – 20 Whole Dried Red Chilies (Akhi Mirch)
3. 2 tea spoons Coriander seeds (Akha Dhaniya)
4. 1 Tea Spoon 5 spice powder (Garam Masala)
5. 2 Clove Garlic
6. 2 Inch Ginger
7. 2 Midium Onion
8. 2 Tomatoes
9. 1 Cup yogurt (dahi)
10. Spices (Masala) – Salt / Red Chilly Powder / Turmeric Powder / Coriander Powder
11. Charcoal (Optional)

Procedure:

Soak dried red chilies and coriander seeds into hot water (1/2 cup) for 10 minutes.
Put it in mixture along with ginger and garlic and the water in which it was soaked and make a fine paste.

Take a wok (thick base - kadai) and add 2 ½ Table spoons of cooking oil in it.
Add the paste and cook for 3-4 mins.
Add Mutton and cook it for 20 mins.
Add finely onion and tomato paste and cook for 20 mins.
Add all masalas as per taste – Red chilly powder, turmeric powder, coriander powder, 5 spice powder and salt. Stir continuously.
Finally add curd and cook till the mutton is tender on a low flame.
Garnish with fresh coriander.
Serve hot with roti / naan / paratha.

To give it a smoky flavor (authentic Rajasthani) burn the coal till red hot on the sag stove.
Place an empty bowl (katori) in middle of the kadai in which mutton is cooked and place the burning coal into it. Put 2 tea spoons of Ghee on the burning coal. Cover the wok (kadai) for 5 minutes. This will give a smoky flavor to the recipe.
