Tagliolini con gamberi agli agrumi

Tagliolini pasta prawns and oranges, also known as Tagliolini con gamberi agli agrumi is an exquisite Italian dish and among Celeb Chef Ritu Dalmia`s favourite.

Ingredients:

250 gram Tagliolini pasta
150 grams medium size prawns, peeled, and de-veined
50 ml Pure Olive oil- No Pomace please!
100 grams Tomato, de-seeded and chopped finely
50 grams Onion finely chopped
2 cloves Garlic crushed
Handful Fresh oregano or basil
Splash of fresh orange juice or sweet lime juice
Salt and pepper to season

Procedure:

Heat the oil in a large skillet, add the garlic cloves. When brown, remove the garlic.

Lower the flame and add the onions. You need to do that so as to ensure that the onions do not get burnt.

Add the prawns, and cook for a couple of minutes. Add the tomato, fresh herb and fresh juice.

While the sauce is cooking, cook the pasta in abundant boiling water, till al dente, and drain. Reserve some pasta water.

Add the sauce to the pasta, add enough pasta water to give it a smooth consistency. Season it as per your taste and serve right away.
Note:

You could use what ever seafood you may have handy, or prefer, Scallops, crab meat, Lobster, Squid.

Also in case it is too much trouble to squeeze fresh juice, you could cheat a bit and use pre-packed juice, but use it sparingly as canned or bottled juices tend to be slightly sweet.
